CHASE THE FAIRY

Come visit the first distillery to open in almost 50 years in Cork city. Rebel City Distillery is breathing new life into a former Ford factory building, where we create, craft, and distill a unique range of spirits on-site.

 Join us at Rebel City Distillery for Ireland’s First and only premium Absinthe  experience . Unique celebration of  the Alchemy and Artistry – a night to delve into the myths that have shrouded Absinthe for over 100 years and immerse yourself in the works of some of the world’s most famous Writers, Artists and Philosophers. 

 

Meet for a welcome cocktail in our boutique bar surrounded by elements of celebrated minds before being brought into our Craft Distillery to learn about the art of distillation. Through the flair of storytelling and our immersive distillery experience you will discover the decadent history of absinthe while developing a deeper understanding of the distillation process. Back at the bar you will then be treated to a demonstration of the traditional tasting method of absinthe and two deliciously delectable cocktails, all the while being submerged in the Arts.
 
Absinthe was reputed both to inspire creativity, and trigger hallucinations – hence the term ‘Chase the Fairy‘ – the latter mythical claims eventually led to its ban in many countries around the world. With all bans being lifted in the last 20 years and  our Absinthe winning a Silver at World Drinks Awards 2023 what better way to celebrate than a night paying tribute to those who deemed it their favorite tipple long ago, such as James Joyce, Ernest Hemingway and Pablo Picasso.

This is a fully-functioning distillery nested in Old Ford electrical transformer building. The building was built in 1917 and laid dormant from 1984-2020. The building can be cold during winters as the building was  built to not to retain heat. Warm clothing advised.
