Come visit the first distillery to open in almost 50 years in Cork city. Rebel City Distillery is breathing new life into a former Ford factory building, where we create, craft, and distill a unique range of spirits on-site.
Join us at Rebel City Distillery for Ireland’s First and only premium Absinthe experience . Unique celebration of the Alchemy and Artistry – a night to delve into the myths that have shrouded Absinthe for over 100 years and immerse yourself in the works of some of the world’s most famous Writers, Artists and Philosophers.
Meet for a welcome cocktail in our boutique bar surrounded by elements of celebrated minds before being brought into our Craft Distillery to learn about the art of distillation. Through the flair of storytelling and our immersive distillery experience you will discover the decadent history of absinthe while developing a deeper understanding of the distillation process. Back at the bar you will then be treated to a demonstration of the traditional tasting method of absinthe and two deliciously delectable cocktails, all the while being submerged in the Arts.
Absinthe was reputed both to inspire creativity, and trigger hallucinations – hence the term ‘Chase the Fairy‘ – the latter mythical claims eventually led to its ban in many countries around the world. With all bans being lifted in the last 20 years and our Absinthe winning a Silver at World Drinks Awards 2023 what better way to celebrate than a night paying tribute to those who deemed it their favourite tipple long ago, such as James Joyce, Ernest Hemingway and Pablo Picasso.

This is a fully-functioning distillery nested in Old Ford electrical transformer building. The building was built in 1917 and laid dormant from 1984-2020. The building can be cold during winters as the building was built to not to retain heat. Warm clothing advised.

Awesome
Awesome experience in Rebel City Distillery. I came to find out how alcohol works and I wasn’t disappointed. Superb welcome. Bhagya was very kind and she explained me everything. We see that she likes what she does and she knows gin and absinthe. I will recommend seeing this distillery for its authentic and unique side ! Sarah

Fabulous cocktails and craic
We had an amazing evening in the rebel city distillery. Roisin was a fab host, seriously knowledgeable on all things about gin and absinthe and all things to do with cocktails. Also the history of the building really adds an extra nugget. Will definitely be back again. Absinthe and peppermint tea cocktail was the icing on the cake.

Quirky and Fun Distillery Experience
A new hidden gem right beside the Marina Market in Cork City. Our guide Roisin was knowledgeable and fun. The signature G&T and the quirky Absinth and Peppermint Tea cocktails were both delicious. A lovely new thing to do in Cork. Highly recommend this tour!

A delightful evening in a beautiful venue learning about the history of Absinthe. Our host Roisin was charming and knowledgeable, and made a mean cocktail. The absinthe itself is a revelation. Can’t recommend highly enough.

Loved our time here. Very educational and not just from a distilling point of view, plenty of Cork history to be learned here. Róisín couldn’t have been friendlier and has a very natural way with people which kept us all engaged and interested. Would recommend this to anyone, tourists and locals alike!

A must do in cork!
Rebel city distillery was amazing and such an engaging experience!! It was extremely interesting understanding the background behind maharani gin and the passion the two owners have for their distillery is infectious! Would highly recommend the experience for a corporate event or even a hen do! Plenty of gin to be had and the competition to make the best cocktail was so fun!

Bhagya was the best host, the drinks were fantastic, and both Bhagya and Róisín made planning the event an absolute breeze. Thank you so much for such a memorable day! Malá destilerka Ginu a Absinthu. Velice milá majitelka a dostalo se nám vřelého přivítání. Gin i Absinth chutnalo absolutně skvěle. Koupila jsem si Gin sebou a určitě jej dám ochutnat přátelům.
A little distiller of Gina and Absinthe. A very nice owner and we received a warm welcome. Both Gin and Absinthe tasted absolutely delicious. I bought gin with me, and I'm sure I'll give it a taste to my friends.

Myself and my best friend made our way here hoping it was open and we was so lucky that it was. We had a small tour of the Distillery and tried both the Maharani Gin and the Absinthe they make and we both loved it. The owners were very welcoming and gave us the tour and would absolutely recommend coming here. 🙂

This distillery is fantastic. The gin that is produced is like no other. The aniseed is so tasteful. The ingredients used and the aromas are brilliant. Tea is also an option on your visit.
To see a little idea like this to take off and get to where it is now has to be given praise. The work that is involved is unbelievable. Well done.
I would highly recommend picking one of these beverages as a treat for your self or a gift for some one. All the better it has come from the heart or Cork City.
The interior of this Cork City Distillery where the brewing takes place compliments the overall experience.
With guided tours hens stags parties it's a must do venue to visit. Once again the interior design is amazing. The photos here won't give you the experience of an actual tour or an event.
Highly recommend visiting. Pick up a gift or a gift package. Visit the website but most definitely visit in person. So you can appreciate the work that is involved in producing these uniques drinks. Loving the Maharani Aniseed. Thanks!

A 10/10 experience for our large group. Bhagya was incredibly helpful in organising the event and the entire team were amazing on the day. We made some great cocktails and got plenty of samples of the delicious Maharani gin. Can't wait to go back!

This is quite possibly the coolest micro distillery I've ever visited. The tours are informative and well planned. The best part is that because they are so small, the tours are held by the founders themselves. This would be great for office events and a great learning experience for even younger adults or kids.
Also, on the plus side, it also makes some fantastic gin and absinthe.

Visited this place with my collogues. It was really great to see how companies are evolving.
The best part of the visit was, we were given a complete tour of the whole manufacturing process, and their ingredients etc. etc. which most of the companies dont show case. And the fact that there is a mini bar kinda set-up which helped in making the entire trip more Joyful.
